Mirchi vada is a large, mild green chilli slit and stuffed with a spiced potato mash, coated in besan batter and deep-fried, eaten with chutney or inside a bun as a mirchi bada pav. It is a Jodhpur speciality that Jaipur adopted long ago, and the stalls near the railway station and in the bazaars sell it hot from early morning.
It goes with chai, and with the kachori it makes the Jaipur breakfast.
